This is a region where even a simple country walk is scented with fresh herbs. all along the local lanes and tracks, you will discover wild thyme, oregano, basil, rosemary, marjoram and sage.
And the hillsides around Castelfalfi are the source of other produce, too. The Chianina cattle provide superb steaks, and there are deer, wild boar, hare, pheasant and white truffles.
Not only that, but the estate also produces its own olive oil and wines, from the 30-hectare vineyard, and 58 hectares of olive groves. Here in Tuscany, wine is less a luxury than a staple. Most of the wine made in and around Castelfalfi comes from the Trebbiano and Sangiovese grapes.
The Tuscan passion for wine-making means even a simple house wine will provide a delightful accompaniment to your meal. But you can also treat yourself to some truly exceptional bottles, like the Brunello de Montalcino red, or the Vernaccia di San Gimignano white.
As for cuisine, Castelfalfi will offer a range of tempting options. There will be exclusive fine dining in the castello, and we are refurbishing Castelfalfi’s existing trattoria, to create the classic easy-going italian bistro.
Of course, the hotels will also have their own, excellent international menus. We are planning to restore an existing hotel, in the estate’s restored tabaccaia, or tobacco factory, into a stylish 32-key boutique hotel. and we also have permission to create two new hotels on the estate.
From a picnic in the hills to a light lunch or a formal dinner, Castelfalfi promises to offer a feast for all the senses.
